Keeping with the spice theme of late, I thought I would share these delicious pumpkin spice cookies I made this weekend. While looking for owl cookie cutters, I came across a cheap Linzer cookie cutter from Wilton and thought my new purchase would be a great excuse to make a seasonal cookie idea and share with the site. I used the simple recipe below to make the cutest spiced owl cookies this side of September.
1 cup cooked pumpkin
1/2 cup butter
3/4 cup sugar
2 cups whole wheat flour
2 tsp baking powder
1/4 tsp sea salt
1/4 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground cloves
To make: Mix ingredients in a large mixing bowl and scoop rounded teaspoon sized dough onto the cookie sheet, then bake at 350°F for 7 minutes. While cooling, use cutter to press owl shapes and discard scraps. Use the Linzer without an attachment to punch the other side of the cookie and discard scraps. Frost & combine.
To save time, I used store-bought cream cheese icing for the filling and used the left over dough for regular cookies that I frosted and sprinkled with fresh ground cinnamon.
Of course you can always use your own recipe if my semi-health conscious dough doesn’t do it for you. You could also sprinkle with powdered sugar. Get creative!
